Softneck garlic is often associated with the garlic you may find in grocery stores.  The term 'soft' neck refers to a soft stem growing from the bulb that does not produce a scape.  Softneck garlic is sub-classified into Artichoke and Silverskins.  Artichoke have multiple layers of cloves and Silverskins are divided into two sections within the bulb.  Most softneck varieties are mild, but there are always exceptions to this rule.
