Softneck garlic is often associated with supermarkets.  The 'soft' neck makes them more economical for large mechanized systems.  Softneck garlic grows in multiple layers of 12-24 cloves.  Softneck garlic includes Artichoke and Silverskins  Most varieties have a milder taste with a creamy finish, but there are exceptions to this rule.  Most softnecks can be delicate to cook but great for salad dressing and sauces.
