This little gem has many functions in our field.  It is the first garlic up in the spring and the first one to be harvested.  Xian has a lavender/light purple coloured string that matches the bulbs beautiful purple speckles.  It is a mild garlic with grassy notes and a faint sweet aftertaste.  Xian can tolerate higher heat cooking like Asian inspired cuisine.
